Easy Does it with Mugshots

We finally got around to trying out the Mugshots I received last week (see past post here), and helping out with the whole process was my very helpful ("Me do it! Me do it!") niece Maddie.

Here's how it went:

First, pour contents of the bottle into a coffee mug. Mix well.

Add egg and beat well.

Add oil, milk and vanilla extract. Mix thoroughly.

Place mug into microwave oven. Cook for two minutes at the highest (800-1,000 watts) setting.

Finally, enjoy eating from the mug or turn over on a plate.

So obviously, it's very easy to do. Hey, even a four year old could do it!:p

I was surprised that the cupcake came out more spongy than crumby in texture though. Maybe we overstirred the batter or the microwave oven was set too high? And the cupcake looked pretty craggy when we turned it over on the plate because some got stuck inside the mug.

Be that as it may, neither the sponginess nor the cragginess didn't detract from the taste and Maddie, the picky eater, couldn't stop scarfing down the strawberry cupcake. So Houston, we have no problem here.

It was definitely a fun activity and up to now, my niece insists on making another cupcake, preferably the one with sprinkles, but of course! :)
